This Dill Pasta Summer Salad recipe is perfect to share at pool parties or use as a meal prep item for the week.

Dill Pasta Summer Salad Recipe
Ingredients:
- 1 lb of Fusilli pasta or other short pasta, cooked & cooled
- 1 Orange Bell Pepper, chopped
- ½ Red Onion, chopped
- 1 cup of Broccoli, chopped
- 1-2 cups of grape tomatoes, halved
- 1 cup Spinach, chopped
- Fresh dill, chopped
Optional:
- Cheese, feta or parmesan
- salami, chopped
- Tofu
Dressing:
- Coconut Yogurt (or any plain yogurt)
- Pickle Juice
- Dijon Mustard
- Fresh dill
- Dried parsley
- Red chili flakes
- Salt & pepper
DIRECTIONS:
Chop ingredients.
Make dressing.
Mix everything together.
